Cashew Nut
Part of the nuts produced by Itaueira is sold in natura for the big nut processing companies of the State of Ceara. Another part is improved by mini factories in the partnership system with small producers.
In 2001, Itaueira has obtained its certification granted by IBD as producer of organic cashew nut.
Part of the nuts produced by Itaueira in processed by partnership with small producers and processors in mini factories produced by CEMAG S/A. Families heats and cuts the nuts. The almonds are then gathered in a process central nucleus, responsible for peeling, selection, packing and marketing of the raw or toasted almonds.
The Cashew Nut Almond is a food that has high nutritional valued coupled with a fine taste. It has high protein content and is rich in B-complex vitamins as thiamine, riboflavin and niacin. We should point out that the amount of riboflavin (Vitamin B2): 500 µg% is higher than that found in milk: 190 µg%.
The almond may be consumed in natura or toasted either as appetizer or as ingredient of a number of recipes, whole, in pieces or as flour, by replacing other types of nuts.
